I have really been slacking off in the cooking department lately so I thought I'd better make a nice dinner tonight for a change. I decided on Salade Niçoise because we have beans, tomatoes, and little potatoes from our garden right now.
I have two recipes for Salade Niçoise and they both call for all that stuff up there, but they also call for anchovies, olives, and capers, which I was too lazy to get. So I'm calling this {Almost} Salade Niçoise.
But it still looks darn good to me.
Look at those cute little purple potatoes we grew. I think I've told you about our potato patch. We never actually plant them, they just keep coming up in the same spot every year. We got about 24 potatoes this year. Amazing yield, eh?
And of course the tomatoes in California are always lovely. Plenty of sunshine and heat.
I wish these were farm fresh free range eggs, but they are from the grocery store.
But those green beans were picked just minutes before I cooked them and they are delicious.
And the tuna is packed in Olive Oil and high in Omega 3.
So that's what we had for dinner last night. I'm making baby steps back toward real cooking again here Amongst The Oaks.

Good for you! I hear you about slacking off cooking-wise. I had a very bad week of it as well, but my attempt at redemption was not nearly as sophisticated as yours! My kids would turn up their noses at Salade Nicoise so I did homemade pizza instead. I figure it beats having one delivered and they like it better anyway!
By whatever name it's called, you've made a lovely salad. Your photos are wonderful. This was a very nice post.
Those purple potatoes are awesome!! I hope they taste as good as they look. How nice that they come up every year. A little gift from Mother Nature!!

Love Salade Niçoise! Especially the anchovies! *Ü* Like you, I usually make it with whatever I have on hand. Last time I added golden beets. That was pretty good.

Looks great to me! I don't like anchovies and capers so it would have just fine as "Almost" for my taste. LOL!
